Chia-Mango Pudding

The other day I needed a quick fix. I looked in my fridge and cupboard and wondered "what could I (lovingly) throw together?" Here is what I found:

  • Home-made yogurt
  • Chia Seeds
  • A Mango
  • Honey

Layer: 1 cup of plain full-fat yogurt in the bottom of a bowl.

Blend 1/2 a mango and layer it on top of the yogurt.

Then layer about 1 tablespoon of soaked chia seeds (they should be nice and gelatinous) on top.

Optional: add a tea spoon of honey.

Boom! Done.
