Gluten-Free Granola Bar

A while back, I decided to jump on the gluten free bandwagon. For my digestive system, it's a good bandwagon to be on. Ever since eliminating gluten from my diet I have felt less bloating, less indigestion and less fatigue.

However it's tough to find a yummy, non-expensive gluten-free snack when on the go! So I decided to create my own:

  • 1/4 cup butter
  • 1/2 cup unpasteurized honey
  • 1/4 cup slithered or coarsely chopped almonds
  • 1/4 cup coarsely chopped pecans or walnuts
  • 1/4 cup of sunflower Seeds
  • 1/4 cup of pumpkin Seeds
  • 1/4 cup of dried cranberries
  • 1/4 cup of raisins
  • 1 tsp of fresh grated ginger

Stir butter and honey together in a pot at a low heat until melted. Once melted, take the pot off the stove. Add all of the other ingredients and mix thoroughly.

Spread mixture on a squared 8" baking tray. Place tray in a pre-heated oven at 350 degrees F (180 degrees C) for about 25 minutes.

Take tray out and let the mixture cool. Then cut into bars or squares.
